  Appetizer
  *
 
  • JTomato juice served cold in small cups, to which has been added a bit of very finely grated onion and finely chopped green pepper and celery.
  • Carrot Strips
  • Ripe Olives
  • Radishes

  CARROT SOUFFLE (vegan : savory carrot cake)
  *
 
  • Apple Juice
  • Carrot and Celery Juice
  • Steamed Onions
  • Broccoli
  • Fresh Green Peas
  • Stuffed Celery Salad
  • Cinnamon Apple with Whipped Cream (1)
  *
  Carrot Soufflé
  *
 
  • 6 egg yolks (2) [cake: around ¾ cup small oat flakes... more as needed]
  • 6 tablespoons water
  • 1/2 teaspoon vegetable salt
  • 2 cups triturated (or finely grated) raw carrot pulp
  Thoroly beat the egg yolks (2)‚ water and salt and fold in the carrot pulp with a fork.. Pour in a greased pyrex baking dish, square or oblong, about 1½ or 2 inches deep, and bake in a hot oven 450° until done. When a silver knife dipped in cold water and inserted in the Souffle comes out clean, it is done. Serves 8 people.

  Steamed Onions
  *
  The onions can be steamed in their own juice and a bit of olive oil in a casserole dish in the oven while the Souffle is baking. Remove from oven just as soon as tender and spinkle with yellow grated cheese (3) and a little paprika and place under the broiler just long enough to melt the cheese (3). Allow 2 medium sized onions for each serving desired. They should be finely chopped before cooking.

  Cook the peas and broccoli just long enough to break up the fibers, remove from fire, season with vegetable salt and butter (3) and serve at once.

  ALTERNATIVES POUR VEGANS
  *
  (1) A soy substitute exists and can be found in health food stores
(2) or small oat flakes, well soaked in rice milk
(3) diluted tahini (sesame purée) or diluted almond purée, browned under the grill.
(4) 6 soupspoons of diluted tahini, (sésame purée)
(5) or fructose diluted in a little rice milk, or rice syrup
(6) or soft tofu mashed with a fork

  Stuffed Celery Salad
  *
  Clean and de-string celery. Prepare a small dish of finely chopped parsley and one of finely grated carrot. Mix honey (5) with cottage cheese (6) and fill center of tender crisp celery. Top with some grated carrot and sprinkle with parsley. Cut in strips about 2 inches long and arrange 4 or 5 on crisp lettuce leaves.

  Cinnamon Apple With Whipped Cream (1)
  *
  Finely grate sweet apples (Delicious are preferable) and season with honey (5) and cinnamon. Serve in sherbet glasses topped with whipped cream (1) (sweetened with honey (5) and finely chopped almonds.

  Nut Dressing Supreme
  *
 
  • 3 cups finely cut celery
  • 6 cups finely grated carrots
  • ¾ cup finely cut onion and parsley
  • 1 cup chopped walnuts
  • 1 ½ teaspoonsful of sage
  • 1 cup broken pieces raw cashew nuts
  • vegetable salt
  • olive oil or butter (4)
  *
  Prune Whip
  *
Wash well and soak prunes in water until thoroughly soft. Drain, pit and put through food chopper, then through colander. Mix with the prune pulp one-third as much flaked pignolias and beat well together with a rotary beater. A little honey (5) may be added if desired, but prunes are usually sufficiently sweet. Top with whipped cream (1) and a sprig of mint.

A perfectly good meal can be ruined by using - crackers or bread for stuffing - bread and butter, gravy made with flour -potatoes - cake or pie crust made with flour. By omitting from the meal all food containing flour, starch or sugar it will be entirely compatible and should not upset the digestion.

  Avocado Dressing
  *
  Mash very ripe avocado with fork and add a little Health Mayonnaise [sold in Health Food Stores] or a few drops of vegetable juice, and beat until smooth and fluffy. If more seasoning is needed add a little vegetable salt and finely grated onion if the dressing is to be used for vegetable salad. If used for fruit salad, add a little honey (5)
